Caramel Corn

(Vegetarian, Gluten-Free, Soy-Free - if using microwaveable popcorn, check ingredients for hidden wheat or soy products)

INGREDIENTS:
§  ½ cup butter
§  ¼ cup corn syrup
§  1 cup brown sugar
§  ½ tsp salt
§  ¼ tsp baking soda
§  ½ tsp vanilla
§  3 quarts popped popcorn (can be air popped, stove popped, or microwave popped, but don’t use pre-flavored unless you like it really buttery or such)

PREPARATION:
1.       Preheat the oven to 250 F and line a large roasting pan with a silicon baking mat or parchment paper.
2.      Melt the butter in a large stock pot over low heat. Stir in the corn syrup, sugar, and salt. Bring the mixture to a boil, stirring constantly. Boil without stirring for 5 min.
3.      Remove from the heat, stir in the soda and vanilla. The mixture should foam up a bit. Dump the popcorn into the pot and stir to coat well, scooping from the bottom to the top and making sure there is not caramel sticking to the bottom of the pot.
4.      Put the popcorn into the prepared roasting pan and spread it out a bit. Bake for 45 min, taking out and stirring around a bit every 15 min (you cannot really “stir” the popcorn because it is all stuck together, so just push so pieces from the bottom to the top and try and move some things around to bake evenly.)
5.      Once the caramel has cooled down a little, break it up with your hands and put it into a bowl to finish cooling. Allow the popcorn to cool completely before eating (if you can!) so that the caramel hardens and the candy will be nice and crunchy.


 This recipe is VERY easily doubled...

Which is awesome because it is SO good, but
it's terrible because it is SOOO good!!! 

So make it for parties and all your friends will love you
...or will they hate you?...nah they'll love you! :)
